It is a rooster braised with lardon, mushrooms, and red wine, usually from the Burgundy region but any other form of wine can still be used. We had heard about the Paris by Mouth food tour ahead of arriving in Paris and booked ahead which I highly recommend. It was well planned, great knowledgable guide, wonderful shops and markets. And of course the food and wine were amazing. I would highly recommend it for a low key, fun way to learn more about food and wine in Paris.
